Radish Pickles

Radish Pickles

This delicious recipe comes from our friends at Limestone Gardens using one of our favorites, watermelon radishes!

Great for radish beginners or veterans, watermelon radishes are mild and a bit sweet. Popping with flavor and color, they're a great addition to salads and stir-fry – or as pickles for tacos and sandwiches! Other types of radishes work great as well.

Packing Pickles-

  • Cut 1 small onion, 2 cloves of garlic, and enough radishes into slices to fill a pint mason jar (or use a food processor to make quick work of them like Victor and Erica at Limestone)
  • Bring 1/2 cup water and 1/2 cup apple cider vinegar to a boil
  • Place onions, garlic, and radishes in a pint mason jar and cover with liquid mixture and then refrigerate
